🛒 Ingredients

  • 1 pound elbow macaroni
  • 1/2 cup unsalted butter
  • 1/2 cup all-purpose flour
  • 4 cups whole milk, warmed
  • 1 teaspoon salt, or to taste
  • 1/2 teaspoon black pepper, or to taste
  • 1/4 teaspoon smoked paprika
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon cayenne pepper (optional, for extra heat)
  • 4 cups shredded sharp cheddar cheese
  • 2 cups shredded Monterey Jack cheese
  • 1 (9.75 ounce) bag Flamin' Hot Doritos, crushed
  • 2 tablespoons chopped fresh chives (for garnish, optional)

Step-by-Step Instructions

  1. 1

Preheat your oven to 375°F (190°C). Grease a 9x13 inch baking dish.

  2. 2

Cook the elbow macaroni according to package directions until al dente. Drain well and set aside.

  3. 3

In a large saucepan or Dutch oven, melt the butter over medium heat. Whisk in the flour and cook for 1-2 minutes, stirring constantly, to create a roux.

  4. 4

Gradually whisk in the warm milk, a little at a time, until smooth and no lumps remain. Continue to cook, stirring frequently, until the sauce thickens, about 5-7 minutes.

  5. 5

Remove the saucepan from the heat. Stir in the salt, black pepper, smoked paprika, garlic powder, onion powder, and cayenne pepper (if using).

  6. 6

Add the shredded cheddar cheese and Monterey Jack cheese to the sauce, stirring until completely melted and smooth. Taste and adjust seasonings if necessary.

  7. 7

Add the cooked and drained macaroni to the cheese sauce and stir until evenly coated.

  8. 8

Pour the macaroni and cheese mixture into the prepared baking dish. Spread evenly.

  9. 9

Crush the Flamin' Hot Doritos into coarse crumbs. You can do this by hand, in a food processor, or by placing them in a Ziploc bag and crushing with a rolling pin.

  10. 10

Evenly sprinkle the crushed Doritos over the top of the mac and cheese.

  11. 11

Bake for 20-25 minutes, or until the mac and cheese is bubbly and the Doritos topping is lightly toasted and crispy. If desired, broil for the last 1-2 minutes for extra crispiness, watching carefully to prevent burning.

  12. 12

Let stand for 5 minutes before serving. Garnish with fresh chives if using.

  13. 13

Serve hot and enjoy the spicy, cheesy goodness!
